Broccoli and Cheese Omelet

This is an easy meal for 1 serving. I prefer to use salt and pepper for seasoning but this is optional.

  • 2 eggs
  • 2 table spoons of water
  • 1/3 cup of cooked broccoli florets
  • 2 tables spoons of finely shredded cheddar cheese
  • Salt and pepper



  1. Beat eggs and water together in a small bowl
  2. With a cooking spray, coat the pan, about 6-8 inches thick
  3. Heat over medium-high heat until hot
  4. Pour in the egg mixture ensuring that it reached the edges
  5. Softly push the cooked edges to the center so that the uncooked portions can reach the surface of the hot pan
  6. When you see the upper surface thickening then it’s time to add a layer of broccoli and cheese.
  7. From one edge of the omelet, fold it in half with a turner
  8. Transfer the omelet to a large plate the season with salt and pepper.
